Tomato Paste in the Thermomix

Five ingredients. No unknown ingredients. Make and freeze, no waste. We always have this in our freezer - save money and make your own!

 

Ingredients:

  • 1kg tomatoes
  • 20g olive oil
  • 1 tbs oregano (or any other dried herb)
  • 1 handful fresh herbs (I use basil or parsley or mix of both)
  • 10g rock salt

Method:

  1. Cut the tomatoes into quarters and put in thermomix bowl
  2. Add all other ingredients
  3. Mix speed 10 seconds, speed 8
  4. Scrape down sides
  5. Cook 30 minutes, veroma, speed 1, using steaming basket in place of measuring up
  6. Scrape down sides
  7. Cook further 10 mins, veroma, speed 1, using steaming basket in place of measuring cup
  8. Scrape down sides
  9. Blitz 1 minute, speed 9
  10. Allow to cool and freeze in single-serve portions for easy use

Chocolate Milkshake Syrup

This is a new, refined sugar free recipe that's fast become a staple at our place. Especially since school's out!

Ingredients:

  • 1/3 cup maple syrup
  • 2 tbs cacao powder (or cocoa powder)
  • 2 teaspoons vanilla essence
  • 1/3 cup water

Method:

  1. Put all ingredients in a saucepan over low heat and stir until mixture is smooth
  2. Leave to cool, then pour into container/glass jar and store in the fridge

Serving:

  • Makes approx 4-6 milkshakes
  • Add 2-3 tbs syrup in a glass of cold milk and enjoy!

Six Ingredient Banana Bread

My kid's new favourite banana bread, and it's the most simplest I've ever made! Six basic ingredients and refined-sugar free, you won't regret whipping this one up. Perfect for freezing and packing in the lunchboxes.

 

Ingredients:

  • 3 large bananas - the older, the better
  • 1/3-1/2 cup dates
  • 1/3 cup coconut oil
  • 2 eggs
  • 1 tsp vanilla essence
  • 1 3/4 cups self raising flour

Method:

  1. Put all ingredients except the flour in a food processor or Thermomix and blitz on high speed for 20 seconds.
  2. Pour into a bowl, add flour and stir gently until just combined
  3. Pour into a loaf tin and bake in 160 degree oven for approx 45-50 minutes or until skewer comes out clean
