Double Choc Zucchini Bread Recipe | Lunchbox-Friendly & Freezer-Friendly

Double Choc Zucchini Bread is a staple at our place. Not only is it packed with 3 whole zucchinis, but the shredded veg gives you the fudgiest chocolate loaf you’ve probably ever tried 🤤

Ingredients (fills 2 krumbsco Loaf Trays, halve to fill 1!):

• 3 zucchinis (grated)
• 1¾ cups plain flour
• ⅓ cup cocoa powder
• 1 tsp baking soda
• 1 tsp vanilla essence
• 1¼ cups white sugar
• 2 eggs
• 7 tbsp butter (melted)
• 300g dark chocolate chips

Method:

1. Squeeze the water out of the zucchini.
2. Mix dry stuff & then mix in the wet.
3. Combine both, stir in zucchini + choc chips.
4. Bake in your krumbsco Loaf Tray at 170°C for 25–35 mins (or until a skewer comes out clean).
5. Let it cool a bit, then slice it up ✨

Is it the healthiest thing on the planet? No, probably not 🙃
