Ingredients: ¼ cup butter (room temp) ½ cup sugar 1 egg 1 tsp vanilla extract ¾ cup SR flour ¼ cup milk 1 tbs lemon zest ¼ cup lemon juice Method: Mix butter and sugar with electric mixer for 2 mins Add egg and vanilla and mix until combined Add milk, lemon zest, lemon juice and mix Add flour and stir through gently Fill moulds to ¾ full Bake 160 degrees, 16 mins
