Broccoli Pesto Scrolls | Recipe by krumbsco using Air Fryer Baking Mats

Recipe for one of my fav hacks that sneaks greens into the lunchbox without the kids having a clue! Written recipe is below 👇🏼

Ingredients for broccoli pesto:

• 1 cup cooked broccoli
• 1/2 cup fresh basil leaves
• 1/3 cup olive oil
• 1/3 cup parmesan cheese (or whatever I said in the reel, can't remember off the top of my head!)
• 2 tbs lemon juice
• 2 garlic cloves
• 1/2 tsp salt

Blitz in a food processor and store in an airtight jar!

For scrolls:

1. Defrost a sheet of puff pastry
2. Add broccoli pesto
3. Roll up into a log
4. Cut into scrolls
5. Coat in milk (or egg wash)
6. Cook in the air fryer, 180 degrees 12 mins or in the oven, 200 degrees 16 mins
