choc chip oat biscuits | recipe

EASY, home-made, super tasty, Choc Chip Oat Biscuits that will help keep them fuller for longer. Perfect for lunchboxes, after school snacks, lockdown-survival! Freezer-friendly & lunchbox-friendly. 

Ingredients:

  • 150g butter, room temperature
  • 1/2 (80g) cup brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 cup plain flour
  • 2 cups rolled oats
  • 1/2 tsp baking powder
  • 1/3 cup choc chips - I use half milk, half dark

Thermomix Method:

  1. Put butter and brown sugar in bowl and mix 10 seconds, speed 5
  2. Scrape down edges and repeat
  3. Add egg, vanilla, flour, oats, baking powder and mix 10 seconds, speed 3, reverse
  4. Add choc chips and mix 10 seconds, speed 2, reverse
  5. Take spoonfuls of mixture, roll into balls and place onto baking tray
  6. Flatten slightly with a fork
  7. Bake in 160 degree oven for 15 mins or until golden

Non-Thermomix Method:

  1. Beat butter and brown sugar for 2-3 minutes or until creamy
  2. Add egg, vanilla, flour, oats, baking powder and stir until combined
  3. Add choc chips and stir until mix through
  4. Take spoonfuls of mixture, roll into balls and place onto baking tray
  5. Flatten slightly with a fork
  6. Bake in 160 degree oven for 15 mins or until golden
