easy cornflake cookies | recipe
Got Cornflakes? Got kids? You need to make these...! Lunchbox-friendly, freezer-friendly, a hit with the kids and a great way to use up the crumbs at the end of the cereal box.
Ingredients:
- 1/2 cup butter (115g)
- 1/3 cup brown sugar
- 1/3 cup white sugar
- 1 teaspoon vanilla essence
- 1 egg
- 1.5 cups plain flour
- 1/2 tsp baking powder
- 1.5 cups cornflakes, crushed
Thermomix Method:
- Put butter and both sugars in Thermomix and mix for 15 secs, speed 6
- Scrape down and repeat
- Add vanilla and egg, and mix for 10 seconds, speed 4
- Add flour and baking powder, mix for a further 10 seconds, speed 4
- In a separate bowl, add the cornflakes and lightly crush by hand
- Roll tablespoons of the mixture into balls and roll in the crushed cornflakes so it's entirely covered
- Put rolled biscuits onto lined baking tray leaving enough space in between to allow for spreading
- Cook in 160 degree oven for 12-15 minutes
- Leave on baking tray to cool
Non-Thermomix Method:
- Mix butter and both sugars with beaters for 2-3 minutes or until creamed
- Add vanilla and egg, and beat until combined
- Add flour and baking powder and mix with a wooden spoon until just combined
- In a separate bowl, add the cornflakes and lightly crush by hand
- Roll tablespoons of the mixture into balls and roll in the crushed cornflakes so it's entirely covered
- Put rolled biscuits onto lined baking tray leaving enough space in between to allow for spreading
- Cook in 160 degree oven for 12-15 minutes
- Leave on baking tray to cool
