easy cornflake cookies | recipe

Got Cornflakes? Got kids? You need to make these...! Lunchbox-friendly, freezer-friendly, a hit with the kids and a great way to use up the crumbs at the end of the cereal box. 

Ingredients:

  • 1/2 cup butter (115g)
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 1.5 cups plain flour
  • 1/2 tsp baking powder
  • 1.5 cups cornflakes, crushed

Thermomix Method:

  1. Put butter and both sugars in Thermomix and mix for 15 secs, speed 6 
  2. Scrape down and repeat
  3. Add vanilla and egg, and mix for 10 seconds, speed 4
  4. Add flour and baking powder, mix for a further 10 seconds, speed 4
  5. In a separate bowl, add the cornflakes and lightly crush by hand
  6. Roll tablespoons of the mixture into balls and roll in the crushed cornflakes so it's entirely covered
  7. Put rolled biscuits onto lined baking tray leaving enough space in between to allow for spreading
  8. Cook in 160 degree oven for 12-15 minutes
  9. Leave on baking tray to cool

Non-Thermomix Method:

  1. Mix butter and both sugars with beaters for 2-3 minutes or until creamed
  2. Add vanilla and egg, and beat until combined
  3. Add flour and baking powder and mix with a wooden spoon until just combined
  4. In a separate bowl, add the cornflakes and lightly crush by hand
  5. Roll tablespoons of the mixture into balls and roll in the crushed cornflakes so it's entirely covered
  6. Put rolled biscuits onto lined baking tray leaving enough space in between to allow for spreading
  7. Cook in 160 degree oven for 12-15 minutes
  8. Leave on baking tray to cool
