choc zucchini muffins | recipe

These seriously delicious muffins have a whole skin-on zucchini.... and they won't even know (unless you tell them!). A great way to add a hit of greens into a favourite treat!


  • 1 medium zucchini, skin-on
  • 1 over-ripe banana
  • 100g butter
  • 120g sugar
  • 1 cup self raising flour
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/2 cup choc chips - I use half dark, half milk 
  • 1/4 cup cocoa powder
  • 1/2 cup milk


  1. Preheat oven to 160 degrees
  2. Put zucchini and banana in Thermomix and chop 3 seconds, speed 5 (or food processer for a couple of pulses). Scrape down sides and repeat. Remove mixture and set aside
  3. Add butter and sugar, and mix 20 seconds, speed 4 to cream. Scrape down sides and repeat
  4. Add an in all other ingredients (including banana and zucchini mix) and mix 20 seconds, speed 3 on reverse
  5. Spoon into muffin moulds and bake for 20 minutes of until skewer comes out clean
