choc chip chickpea cookies | recipe

An easy favourite with a bonus protein boost thanks to a whole tin of chickpeas! A great one for the lunchbox. 

Ingredients:

  • 120g butter
  • 1/2 firmly packed brown sugar
  • 2 eggs
  • 1 tbs vanilla essence
  • 1 can chickpeas - drained and pat dry with papertowel
  • 3/4 cup chocolate chips - I use half milk, half dark chocolate
  • 1 cup self raising flour
  • 1/2 cup rolled oats
  • 1/4 tsp salt

Method:

  1. Put butter and sugar in Thermomix and mix 20 seconds, speed 4 to cream
  2. Add eggs and vanilla and mix 3 seconds, speed 5 
  3. Add chickpeas and chocolate chips and mix speed 3, 5 seconds, reverse
  4. Add flour, oats, salt and mix 20 seconds, speed 3
  5. Bake in 170 degree oven for 12-15 minutes or until browned
  6. Leave on tray to cool completely

**Non-Thermomix: All of the above can be made without a thermomix. Steps 1 and 2 can be mixed with electric beater, and steps 3 and 4 can be stirred by hand
