lunchbox sausage rolls | recipe

Protein + 3 veg (zucchini, carrot, spinach leaves) - something my kids would NEVER eat if I put in a sandwich, but inside a sausage roll it's an absolute winner! Variety. Healthy. Affordable. 

Ingredients:

  • 1/2 onion
  • 3 garlic cloves
  • Handful spinach leaves
  • 1 zucchini, chopped
  • 1 carrot, chopped
  • 1/4 cup worcestershire sauce
  • 250 chicken breast or mince
  • 1 egg
  • 1 tbs oregano or mixed herbs
  • Sandwich off-cuts/bread - approx 2 pieces
  • 1 piece puff pastry
  • 1 extra egg, whisked

Method:

  1. Put onion, garlic, zucchini, carrot in thermomix and mix for 4 seconds, speed 5
  2. Scrape down edges and add worcestershire sauce, chicken mince, egg, oregano/mixed herbs, sandwich/bread pieces and mix for 10 seconds, speed 5
  3. Cut a piece of puff pastry in half horizontally and fill with mixture through the middle of the long-side, spooning mince into a long sausage shape
  4. Fold each long pastry side into the middle and gently press down
  5. Turn over so seam-side is down
  6. Slice into small pieces, and brush with whisked egg
  7. Place on a greased/lined tray, approx 2cm apart
  8. Cook in airfryer 180 degrees for 12 mins, or oven in 200 degree oven for 20 mins
